  I need support to understand why when I set % of progress on one activity listed in the project, automatically SW change some date of the project.

  When you enter percent complete on a task… you have started the task so it puts an Actual Start on the task. This will anchor the task to start on that date and can alter the schedule for successors (or predecessors)
